Beef Prsuta is a slightly leaner style of smoked beef product. Prsuta is prepared in the same manner as Smoked Beef Vrat, but by using a lean round cut. Prsuta is less marbleized yet just as tasty. Smoked Beef Prsuta allows customers a chance to try variations of this ethnic treat. Beef Prsuta is vacuum packed in both bulk and individual quantities.

The veal version of Harczak's Smoked Polish Sausage. Veal and beef are combined to create the same juiciness of our famous Smoked Polish Sausage. The same secret recipe is used to keep every batch consistent and flavorful.
Also called KRANJSKA KOBASICE
Similar to minced meat, this skinless sausage is made from a blend of ground beef and pork. It can be served on a bun as a sandwich, as an appetizer, or on it’s own as part of a meal.
Whole cuts of high quality, hand-trimmed boneless pork loin for our Smoked Pork Loin. The meat is cured to accentuate the flavor of this delicious, lean cut. After being carefully and slowly smoked in Harzak's custom smokehouse, it is packaged individually in vacuum-sealed bags. Smoked Pork Loin (Svinjska Prsuta) is a salty treat that is best sliced thin and eaten by itself, and it makes a great addition to any stew or meat and cheese platter.

Shoulder Butts are cuts of pork shoulder that have been trimmed down to the core piece of meat called the butt. After trimming, each butt is salted and cured by hand and left to cure until ready for smoke. Suvi Vrat can be eaten like Smoked Pork Loin (sliced and snacked on) or used to flavor many cooked dishes.

The smaller of two types of bacon produced at Harczak's. Following the old-world style of curing, each piece is hand-trimmed, cut, and salted. After curing and smoking, it is ready to eat. This hearty and salty cut works great in many recipes. We also carry a larger, more traditional type of bacon called Imperial Bacon.
Harczak's smoked ribs are like no other. The authentic rich smoked flavor make them perfect for slow cooking like Imperial Bacon. Smoked Pork Rib are cured in a special brine to keep them tender and juicy. Adding just a few ribs to any stew or soup provides a unique, smoky flavor to every bite.
We don't have an Italian name, but our Italian Sausage is as authentic and delicious as it gets. From the fresh spies to the rope style of stuffing. It is great as a main course, or as a sandwich on a French roll with green peppers and onions, as a great addition to chili or in spaghetti sauces.
Fresh pork butts are all that we use to produce this enticing fresh sausage. A mld blend of seasoning allows the true flavor of the high quality meats to thrive in this product. Baking, grilling, and frying are the most popular methods of preparation for this versatile, juicy time-honored favorite.
Specially produced with a secret recipe of spices and no fillers or soy products; our Smoked Polish is always juicy and flavorful. This sausage is excellent boiled, grilled, deep-fried or used as an accent to other dishes.
Offered in mild and hot, both start out from a base of pure beef and pork. When the spices are added, the hot version offers a more zesty palate. Use the Serbian Style Sausage as a substitute for meatballs, add it to chili, grill it on the barbeque, or fry it in a skillet.

This all-beef smoked sausage has a special tangy taste and is ready to eat right out of the package.
A favorite with kids, this product is made with 100% boneless, skinless chicken. It is an emulsified bologna and a leaner alternative to conventional salamis.
Also called PILECI PARIZER
Made with 100% boneless, skinless chicken. It is like the Bologna Salami (Pileci Parizer) but contains whole pieces of chicken that are mixed into an all-chicken binder, similar to the Lean Ham Salami (Krakow). It is a leaner alternative to conventional salamis.
This hand-trimmed, lean ham meat uses whole pieces of pork ham are cut thick and mixed with richly spiced and emulsified ham meat. This product makes a great cold cut and is best on sandwiches, party trays, or as appetizers.
Also called SUNKARICA SALAMA
Made of 100% veal and whole black pepper, this product is similar to the Blended Salami (Tirola) but does not contain any pork product.
Also called TELECI TIROLA
A perfect blend of beef and pork, processed to have a medium-coarse texture. This is a truly "old world" salami with a full flavor. It is best in sandwiches, party trays or accompanied by cheese and crackers.
